Barbecued Beef Short Ribs Recipe
Barbecued beef short ribs is one of my favorite meals. The short rib is a little bit more difficult to tenderize but the flavor makes the extra effort more than worth it.
Beef Short Ribs Recipe Ingredients
3 lbs. beef short ribs is what I use but amount is not a critical factor in this recipe. If you exceed 3 lbs. just use more sauce. If you use less, less sauce. Pretty simple.
1 medium onion sliced into rings.
1 Cup barbecue sauce – Many commercial brands are very good and saves time. I am fond of Baby Ray’s but you may like something else. If you want to be ambitious and make your own sauce, we have a very good barbecue sauce recipe on our barbecue brisket recipe page which can be used with a few alterations. The one change of course will be to save drippings from the ribs and not a brisket.
Instructions for barbecuing short ribs
Prepare gas grill by lightly oiling the grates and heat to medium. If using briquettes, oil grates and wait till they are white. If you have an adjustable grill put it on a setting about four inches off the briquettes.
Rub ribs with Chef Salt until completely covered. You can do this immediately before grilling or ahead of time.
Arrange the ribs on the grill. Spread them out as much as possible.
Turn short ribs occasionally. If your grill is not adjustable or your heat is higher than medium, you will have to turn the ribs more often. Grill until the ribs are brown on all sides.
Put ribs into a shallow pan with onions. I would lightly oil the pan or use a food release spray like Pam. Just be sure if you use the spray to use a high temperature spray. Even though we are going to low cook the short ribs some of the lighter sprays don’t work as well.
Roast in the oven covered for two hours at 250 degrees. Covering can be as simple as aluminum foil.
Uncover and completely cover in barbecue sauce then cook an additional 30 minutes at 325 degrees – uncovered.
Serve with additional sauce.
