Pot Chuck Roast with Vegetables
Chuck roast is one of my favorite cuts of beef. It’s flavorful. Some people may think it has too much fat but that’s what makes it flavorful. The section called chuck is one cut from the rib eye. The cut which a prime rib comes from. That’s correct – one slice over and instead of a chuck steak you have a slice of prime rib. The beauty of the chuck steak is – it’s about 3 dollars a pound less than prime rib.
I like to slow cook the chuck in a crock pot. The fat melts off into the broth and it makes a great pot roast. Add a few vegetables and you have a great, hearty meal.
Cook this mixture in your slow cooker for four hours on high.
Then quarter potatoes and add them to the roast mixture.
Cook until the potatoes can be easily punctured with a fork. It took mine 90 minutes. If you are in a hurry you can par boil the potatoes before adding them to the roast.
I guarantee this will be a flavorful meal. It may not be considered fancy. It may not look elegant but it will taste great.
