Pot Chuck Roast with Vegetables

Chuck roast is one of my favorite cuts of beef. It’s flavorful. Some people may think it has too much fat but that’s what makes it flavorful. The section called chuck is one cut from the rib eye. The cut which a prime rib comes from. That’s correct – one slice over and instead of a chuck steak you have a slice of prime rib. The beauty of the chuck steak is – it’s about 3 dollars a pound less than prime rib.

I like to slow cook the chuck in a crock pot. The fat melts off into the broth and it makes a great pot roast. Add a few vegetables and you have a great, hearty meal.

In the bottom of a large crock pot, mine is 7 quarts, I put a couple of cups of beef stock, a cup of ketchup. I also put in fresh oregano, rosemary, basil and parsley from my herb garden. Season it with a 1/4 teaspoon of black pepper, 1 teaspoon salt and a tablespoon onion powder,

I cover the chuck roast with seasoning salt then I sear the chuck roast under the broiler in the oven for about 5 minutes on high. I turn it over and repeat.

I dice the carrots into small chunks. No secrets here just cut them up into the size you like.

Celery stalks. Do the same as the carrots. Use all of the stalks except for the very ends.

Diced carrots and diced celery stalks. Add the celery and carrots to the beef stock and stir. I also diced and added a green pepper.

Cook this mixture in your slow cooker for four hours on high.

Then quarter potatoes and add them to the roast mixture.

I cut up the potatoes into this size but you cut yours into whatever you prefer.

Cook until the potatoes can be easily punctured with a fork. It took mine 90 minutes. If you are in a hurry you can par boil the potatoes before adding them to the roast.

I guarantee this will be a flavorful meal. It may not be considered fancy. It may not look elegant but it will taste great.

  • Oregano
  • 1/4 Teaspoon black pepper
  • 1 Teaspoon salt
  • Seasoning salt
